Multi-layered Wedding Cake

The Bride and Groom had a summer wedding, and they chose this beautiful red, pink and white multi-layered cake, which included eleven cakes total, a fountain, and a bible groom’s cake, for their wedding. The Bride and Groom, who is from Guyana, chose black cake (Caribbean rum cake) cake for their special day.

The wedding was held at the Rose Castle in Brooklyn, NY.

Pink and White Fountain Wedding Cake

The Bride and Groom had a summer wedding, and they chose this beautiful pink and white cake with a fountain for their wedding. The Bride, who is from Jamaica, chose a black (Caribbean rum) cake for her special day.

The wedding was held at the Coral House in Baldwin NY.

Carrot Cake

Made with freshly grated carrots, Marilyn’s carrot cake is rich, moist and flavorful and topped with a cream cheese frosting.

Sponge Cake (Yellow Cake)

A sponge cake is similar to the American yellow cake. Made from scratch with all natural ingredients, Marilyn’s sponge cake is moist, light and delicious.

Caribbean Fruit Cake

Marilyn's caribbean fruit cake is a sponge cake (yellow cake) with a small amount of the rum infused fruits used in black cake. The result is a moist, light and flavorful cake.

Black Cake/Caribbean Rum Cake

Black Cake is known by many different names such as Caribbean Rum Cake, Caribbean Fruit Cake, Caribbean Black Cake, and Christmas Cake. The name depends on what country or caribbean island you're from.

According to a New York Times’ article, Black Cake descended from the British Plum Cake. For many people in the Caribbean, black cake is reserved for special occasions –weddings, christenings, birthdays and christmas. For many, Christmas was not complete without a pan of black cake. The essence of black cake is the fruits (raisins, currents, prunes, mixed peel, and cherries), rum, and brown sugar.

Marilyn’s black cake is an all natural cake made with finely ground fruits soaked a minimum of three months in her secret rum blend. Baked at low heat, the result is a moist delicious cake that epitomizes the taste and flavor of the Caribbean.

Cakes can be ordered undecorated and decorated. However, when decorated, Marilyn adds almond paste before decorating the cake to enhance the flavor.

Pink, White and Blue Baby Shower Cake

This is my baby shower cake. I didn’t know if I was having a boy or girl, so I requested that my shower colors be pink, white and blue (yes, I had requests for my surprise shower). I absolutely loved this cake. A few weeks later, I delivered a beautiful baby girl.

Three Tier Wedding Cake (Part 2)

The Bride and Groom had a Christmas wedding (two days after Christmas), and they chose this classic white three-tier cake with red and white silk flowers for their wedding. The Bride, who is from Guyana, chose a black (caribbean rum) cake for her special day.

The wedding was held in Baltimore, Maryland. Each tier of cake was transported in a cake box (with no damages), and assembled at the reception site.

For our wedding I wanted a unique wedding cake. I also wanted a traditional Caribbean cake instead of the usual pound cake. I spoke to Natasha and she said that her mother would be able to make it for me. Our cake turned out beautifully- we had so many people comment on it. Not only because it was gorgeous, but also because it tasted as good as it looked!! Some of the guest wanted to know where I got it from because it was the best black cake they have had at a Caribbean wedding. A favorite comment of mine came from one of my friends who said, "Your cake looks like one right out of a bridal magazine!!" My husband, who is an American, enjoyed this cake so much he ate the cake the next morning before breakfast. This is probably the best wedding cake anyone has ever tasted...even a year later. If you’re living in New York and is thinking about ordering this cake, I am confident from my experience you will be satisfied with the way it will turn out. I just want to take this opportunity to thank Mrs. Marilyn for her lovely, classically-decorated wedding cake. This is my aunt's 60th Birthday Cake. The cake is placed on tulle and rose petals were sprinkled on the tulle and the rest of the table -- it was stunning. Moreover, it was the best 60th birthday celebration I have ever attended. When I am 60, I hope that I am respected and loved as much as my Aunt B.
